Renowned Korean chef Baek Jong-won has embarked on a new culinary venture in Lyon, France, opening a Korean restaurant in the city's prestigious dining district.
On the October 10th episode of tvN's reality show 'World Restaurant Challenge: Baek's Journey 3,' Baek Jong-won, along with Lee Jang-woo, Kwon Yuri, John Park, and Yoon Si-yoon, set out to achieve an annual revenue target of 1 billion won (approximately $850,000) with their Korean BBQ restaurant 'Hanpan House' located on Lyon's famed Rue Mercier.
Baek expressed his concerns about the ambitious goal, stating, "Even in Korea, a daily revenue of 3 million won is considered a huge success." The street they chose is a culinary hotspot, home to 38 of the most popular restaurants in the region, and demands high earnings due to its extreme rental costs.
The area is particularly known for 'bouchon,' a traditional Lyonnaise home-style course meal known for its generous portions and value. After tasting bouchon, Baek remarked, "It's ultimately a battle of meat. I'm not confident, but I'll do my best. It's a challenge for me too," and decided on a menu featuring pork belly and spicy chicken galbi.
Emphasizing the importance of personalized service, Baek hired two locals with restaurant experience to assist with the grilling and customer service.
On the first day of business, customers were pleased with the friendly service and personalized attention. However, the challenge intensified as customer flow dwindled and rain began to fall, hinting at the difficulties ahead.
Meanwhile, on the day of the show's premiere, Baek Jong-won received the sad news of his mother's passing. The show, previously known as 'Genius Restaurateur Baek' for its first two seasons, has been rebranded as 'World Restaurant Challenge' for its third season.
