On the January 24th broadcast of MBC's Lunar New Year special, a three-part series titled 'Discovery of the Dining Table,' Jang Keun-suk, along with chefs Yoon Nam-no, David Lee, Fabri, and WJSN's Dayoung, embarked on a journey in Pohang, Gyeongsangbuk-do. They explored the roots of Korean culinary culture, which emphasizes harvesting only what the sea allows and consuming it fully.
Jang introduced the concept of a 'zero waste dining table,' where ingredients are used without waste, as he began his journey. He visited a fish farm to encounter the best winter ingredient, yellowtail, and reminisced about his childhood memories of his father's trout farm, sharing his impressions of the sea farm, which differed from freshwater farms.
Jang's enthusiasm shone as he attempted to catch a large yellowtail, wielding a net with passion, bringing laughter to the scene. Despite unexpected challenges from seagulls, he maintained a positive attitude, invigorating the atmosphere with his valuable experience. During the cooking process, he demonstrated his knowledge by explaining the wisdom of 'Oduyukmi,' using every part of the fish from head to fin, to Italian chef Fabri.
Jang's contributions were evident in the kitchen and at the dining table. He volunteered as Fabri's sous chef, diligently preparing vegetables and cooking risotto, fulfilling the role of a reliable assistant. He also showcased a heartfelt mukbang by finishing David Lee's Pohang-style mulhoe, highlighting the unique aspects of Korean culinary culture, known for its raw fish dishes.
Most notably, Jang eloquently explained Korea's unique 'no leftovers' dining culture, drawing admiration. He cited examples like shabu-shabu porridge and chicken galbi fried rice, emphasizing that utilizing leftover sauces is a distinctive aspect of Korean cuisine, showcasing its diversity and inclusiveness.
Towards the end of the broadcast, Jang delivered a heartfelt message, stating, "Food holds the memories and happiness of many people," and emphasized, "The power of the dining table and food is that it brings people closer when shared," leaving a profound impact on viewers.
