Chef An Sung-jae's YouTube channel, 'Chef An Sung-jae,' recently featured a video titled 'Crispy on the Outside, Tender on the Inside: Runner-up of Black and White Chef 2, Culinary Monster Lee Ha-sung's Pick for Best Chicken Soup.'
In the video, Lee revealed that after leaving the renowned restaurant 'The French Laundry,' he faced a challenging period when his planned investment in New York fell through. At a crossroads in his life, Lee was encouraged by Season 1 participant Kim Tae-sung and the news of participation from culinary masters like Choi Hyun-seok and Yeo Kyung-rae, which led him to join the show. Reflecting on his runner-up finish, Lee humbly stated, "I was very lucky, and watching the broadcast made me realize that despite my culinary shortcomings, I reached a high position."
Currently, Lee is focused on the final preparations for his restaurant 'Oyat,' named after his family name, with a target opening in early March in New York. He explained that the name reflects his philosophy of maintaining his identity and core as a chef, inspired by the fact that the Oyat flower was the national flower during the Joseon Dynasty.
Demonstrating his rising popularity post-show, Lee mentioned that over 500 resumes were submitted for job openings at his restaurant. He humorously added, "In New York's K-Town, so many people recognize me that I have to avoid them," expressing gratitude for the show's impact.
Lee's future goals extend beyond mere success; he aims to take good care of his team and those around him. He set a specific goal of achieving 2 Michelin stars in the first year, aligning with the December announcement of the New York Michelin Guide. "I set high goals to provide better opportunities for my team," he added.
An Sung-jae advised, "Dream big, and the preparation process will be the most precious and memorable time," sincerely encouraging Lee's ambitious yet achievable challenge.
At 37, Lee expressed modesty about being called a promising talent but showed determination to dedicate the first couple of years solely to his restaurant.
Previously criticized for his confident persona on 'Black and White Chef 2,' Lee's new venture is eagerly anticipated by food enthusiasts and fans, as he demonstrates both firm culinary beliefs and personal growth.
