Ryu Soo-young, proud of the 'pork red pepper paste stew' that took a year and a half

In KBS 2TV's 'New Release Edition' (hereinafter referred to as 'Pyeon Restaurant'), which aired on the 3rd, 'Eonam Teacher' Ryu Soo-young goes on a culinary journey in Gwangju, the city of gourmets. Previously, Ryu Soo-young visited a 100-year-old traditional five-day market in Gwangju, a city of history and a city of taste, and presented dishes using the ingredients he had purchased. In addition, he went to Donggok-dong's Crab Baekban alley, which has the best cost-effectiveness, and after an exciting mukbang, even served a dish to the restaurant owner, showing off his full taste journey.
Ryu Soo-young happened to get information about a hidden restaurant in Gwangju from a broadcast vehicle driver who accompanied him on this Gwangju shoot. The driver, ‘Taste Jalal’, who knows the taste of Gwangju, strongly recommended it, saying, “This is hangover food that you can’t eat anywhere else.” At this, Ryu Soo-young jumped up from his seat as if he was possessed.
But difficulties awaited. The question is whether the restaurant will allow a sudden request for filming. In fact, the restaurant in question was a restaurant that had never been introduced on television until now. Accordingly, Ryu Soo-young went directly to the scene to recruit people. In a realistic situation, not only Ryu Soo-young but also the production team waited nervously for the restaurant owner's response.
After a while, Ryu Soo-young succeeded in recruiting a restaurant guest. The hangover menu at this restaurant was clam stew. A light and refreshing clam stew that boasts a deep broth flavor with plenty of clam meat, scallops, sweet radish, and fragrant sesame oil. As soon as Ryu Soo-young took a bite of the soup, he repeatedly exclaimed, “Oh my.”
Ryu Soo-young, who was drinking a lot of clam soup, even held an impromptu fan meeting with Gwangju citizens outside the restaurant window.

Ryu Su-young said, “There is a famous red pepper paste stew restaurant in Gwangju. This is a restaurant where you have to wait in line to eat. “It’s also called zucchini stew because it contains a lot of zucchini,” he said. “I tried to make that, but it wasn’t easy to make the broth. So I created a recipe that can be made without broth.”
Ryu Soo-young brought out pork belly instead of the front and hind legs of pork that many people use when making red pepper paste stew. Ryu Soo-young introduced the recipe, saying, “It is a red pepper paste stew that is made by adding red pepper powder to meat oil instead of broth.” The ‘Pyeon Restaurant’ family even took notes on Ryu Soo-young’s ‘Samgyeop Red Pepper Soup’ recipe, which was not as difficult as you might think. After seeing Ryu Soo-young's pork belly stew, the 'Pyeon Restaurant' family said, "It can be a meal, a snack, or a hangover." “It’s a menu worth 3 trillion won per seat,” he said with admiration.
Ryu Soo-young submitted this red pepper paste stew as a competition menu with the theme of ‘Haejang’. Not only did it receive rave reviews from the expert evaluation panel, but it also targeted the young tastes of the group NMIXX, which appeared as a special evaluation panel.
